Description

Mamma’s Tomato Sauce is a genuine homemade pasta sauce from local, Sicilian, mature and carefully selected tomatoes. Cooked in very large pans, passed through the “Passata pomodoro“ and reduced to the right consistency for immediate use. Bottled and sterilized in those very Italian brown bottles it maintains its southern Italian “profumo” and has a use by date of 2 years. We use only very ripe, local tomato which we harvest when it is mature and sun drenched at about the end of August. We do not add any sugar or herbs to our tomato sauce, because ripe tomatoes do contain hardly any acidity and are naturally sweet and aromatic.

Usage

Mamma’s Tomato Sauce is ready for use. Heat in a saucepan for 3-4 minutes, season to taste with salt, some olive oil and a couple of basil leaves. Mix with the drained pasta, sprinkle with grated parmesan cheese and serve immediately. By adding strained capers, tuna, chili, grilled peppers, peas or chicken to the tomato sauce creating different pasta dishes is easy. Being unseasoned, Mamma’s Tomato Sauce can be served hot as tomato soup or cold as tomato-gazpacho.
