Wild Oregano grows on the arid hills rich in clay in
Sicily. This wild growing (silvestre) noT ferTIlized
Oregano of Sicily belongs (together with the greek
variety) to the most intensely aromatic herbs of the
Mediterranean due to the unusually high percentage of
aetheric oils it contains. Wild Oregano is harvested by
hand in the hills of the Alcantara Valley early in the
morning in June/July, bound to bunches and hung up to
dry in a dark and airy room. Keep bunch in the kitchen
on a hook, in a paper bag or in a jar for up to two years.

Sprinkle over tomato salad, mozzarella cheese, Caprese
salad. Add to Tomato sauce, Bolognese sauce, Tomato
soup, and certainly to Pizza – where it adds the ultimate
“Italian touch“.
Note: use Oregano moderately, the aroma can otherwise
be too dominant. Add to Pizza only after cooking, high
temperatures burn the herb and make it bitter. In the case
of Oregano remember: less is more…
